July Recipe: Doug's Watermelon Salsa + Staff Feature of the Month

Watermelon Salsa Recipe

Summer is in full swing here at the Cafe and we are excited to share Doug’s latest recipe. Check out this Watermelon Salsa Recipe:

Ingredients:

  • 1/2 small seedless watermelon

  • 1/3 cup chopped cilantro

  • 4 scallions finely chopped with white and green parts of the scallions

  • 1 large finely chopped jalapeno (no seeds)

  • 3 tsp citrus juice, we recommend 2 tsp grapefruit and 1 tsp lemon

  • 1 tsp kosher salt

Instructions:

  1. Toss all ingredients together until combined.

  2. Serve immediately, or cover and refrigerate for up to 2 days.

  3. Enjoy on top of tacos, grilled chicken/shrimp, and anything else you can think of!
