There is nothing quite like a fresh juicy peach on a hot summer day! In Colorado, it's peach season and all over Summit County-- from Breckenridge to Frisco to Dillon, we are having little farmer's markets and collecting all the beautiful fresh Palisade peaches we can get our hands on.

We like to take that sweet juicy goodness and put a savory twist on it. This Palisade peach and grilled pineapple salsa is the perfect addition to your summer grilling parties. Grilling the pineapple brings out the sweetness and the fresh peaches from Palisade make this salsa so good! Try it on any meat off the grill, fish, tacos or tostadas.

Palisade Peach and Grilled Pineapple Salsa

  • 2-3 (about 1 cup chopped) Palisade Peaches (you can use any fresh peach if you can’t find Palisade)

  • ½ small red onion finely diced

  • ¾ Cup fresh grilled pineapple finely diced (To grill the pineapple place planks on a hot grill until grill marks appear and the pineapple starts to soften).Grilling is optional.

  • 1 ½ TBS cilantro finely chopped

  • 1 large Jalapeno seeded and finely diced

  • Juice from one lime

  • Kosher salt to taste

Mix all ingredients in large bowl. Serve right away or let sit in the refrigerator  until ready to serve. And enjoy!!
