The Best Cauliflower Mashed Potatoes

Doug’s Cauliflower mashed potato Recipe

This is the perfect side to a delicious steak or fried chicken! It goes perfectly under Doug’s gravy and is a family favorite for any special occasion.

Ingredients:

  • 1 head of cauliflower— we like using the purple or the orange (as pictured here) to add a little bit of color

  • 3 boiled and peeled russet potatoes

  • 1/2 cup grated cheese of your choice

  • 1/4 cup buttermilk

  • 2 tbsp butter softened

  • Salt and black pepper to taste

  • 2 tbsp chopped chives for the topping

Instructions 

  1. Rinse off your cauliflower, then cut it into florets.

  2. Steam or boil the cauliflower for about 8-10 minutes, until completely fork tender and soft. Add it to your boiled and peeled russet potatoes.

  3. We love this chunky and delicious but you can also do it all in the food processor. For a chunkier cauliflower mash, mix the cauliflower, potatoes, butter, and buttermilk by hand, or use a potato masher to assist.

  4. You can sprinkle the chives on top to garnish or wait and add gravy.

  5. Enjoy!
