Lasagna Bolognese Recipe

Ingredients

For the Sauce

  • 1 large onion, diced

  • 1 pound good quality Italian sausage. Mild or hot, it’s your choice! We love Polidori Sausage.

  • 1 28 oz can of good quality crushed tomatoes such as San Marzano

  • 3 TBL tomato paste

  • 2 tsp dried basil

  • 2 tsp dried oregano

  • 2 tsp granulated garlic or 4-5 cloves of crushed fresh garlic

  • 1/2 cup heavy cream or Half and Half

  • Salt to taste

For the Cheese Mixture

  • 1 pound shredded mozzarella cheese

  • 1/2 pound shredded or freshly shaved parmesan

  • 1 small container of ricotta cheese

  • 1 tsp salt

For the Lasagna

  • 1 box ready to bake lasagna noodles

  • 1/2 to 3/4 cup shredded parmesan for topping

  • Greased 9X12 baking dish

Directions

  1. Start with the sauce by sauteeing onions until they are translucent over medium-high heat for 8- 10 minutes.

  2. Add sausage and mix it well. Cook it until done and drain off excess grease.

  3. Reduce heat to medium-low and add basil, oregano, and garlic and cook 3-5 minutes,

  4. Add crushed tomatoes and tomato paste and bring the mixture to a simmer for 15 minutes before adding the heavy cream and simmering for another 15 minutes.

  5. When the sauce is completed, set it aside and move on to the cheese mixture,

  6. Mix all ingredients for the cheese mixture together and season well.

  7. Now, it’s time to put it all together. Ladle a small amount of sauce on the bottom of the pan and begin layering the noodles, sauce, and cheese mixture.

  8. Repeat as needed, but a hot tip: apply slight pressure to the lasagna as you go to solidify the mix!

  9. Top the last layer with noodles and sauce and sprinkle the remaining parmesan on it.

  10. Lightly cover and bake in a preheated oven at 350 degrees for an additional 15-20 minutes until it is bubbling and the edges and beginning to brown. If your oven does not have a convection mode, please allow more time for cooking— you’ll know when it’s ready!

  11. Remove from the oven, cool slightly for 10 or so minutes, and ENJOY!
